A healthy salad dressing can be a great option to pair with a heartier salad such as the Panzanella salad, a delicious, Italian dish that is extremely versatile. On its own, the mixture of sweet tomatoes, crunchy snap peas, and crisp toasted bread make for a fun appetizer. Mixed with the aforementioned healthy salad dressing, this dish will delight, not stuff your guests before the main course is ready.
As a side dish, the humble Panzanella salad can compliment roasted meats, veggies or – for all you carb-lovers out there – a hearty pasta meal.
If you’d prefer to keep all your deliciousness in just one bowl, add some beans or cooked meats to the Panzanella salad and be sure to mix well to coat with that yummy, healthy salad dressing. There’s your main meal!
Go ahead and experiment – and get your sauce on!
1/2 of a french baguette
2 large tomatoes
1/2 medium sweet onion or red onion
1/2 cup sugar snap peas cut in half
Excite My Bite Balsamic Vinaigrette
Slice bread into 3/4 inch slices, brush olive oil on both sides and sprinkle with salt.
Place bread on rimmed cookie sheets and bake for 20 min in a 350-degree oven until golden brown. If the underside of the bread is not browning, flip the slices over half way through – it’s important to have that crunch! Let bread cool and then slice into one inch square pieces.
Dice onion and combine tomatoes, onion and peas into a large mixing bowl. Add 1/4 cup Excite My Bite Balsamic Vinaigrette Dressing to bowl and stir until it fully coats the vegetables. Add the bread and stir to combine all ingredients.
Slice basil into thin pieces and sprinkle on top. Serve immediately.
